Tomorrow, Alasdair and I are hosting a few friends and family members for a causal Fourth of July cookout, and I am SUPER excited about the menu. Lemon, honey, and oregano glazed ribs, Caprese salad, grilled corn with jalapeño butter and grilled sweet potato fries… I’m licking my lips already. I’m going out of town this weekend, but I promise to share all the recipes and pictures as soon as I can.
In the meantime, here’s a sneak peek of one of the appetizers I will be serving: Prosciutto-Wrapped Asparagus. This is one of my favorite party appetizers because it’s healthy, delicious, and ridiculously easy. It’s quick enough to prepare 20 minutes before a party but it’s also the kind of appetizer that you can make ahead. When you’re cooking a big meal, it’s always good to have a few dishes that you can prepare the night before. I wrapped the asparagus tonight and plan to cook them right before our guests arrive tomorrow.
For the 10-12 servings of the Prosciutto-Wrapped Asparagus all you need is five ingredients, three of which you probably have in your pantry already:
1 bunch asparagus
1/2 pound thinly-sliced Prosciutto
1 tablespoon olive oil
Sea salt
Freshly ground pepper
DIRECTIONS:
Heat oven broiler and line a baking sheet with non-stick foil. Wrap each asparagus spear in one slice prosciutto and secure with a toothpick if necessary. If your asparagus is thin, you can put two spears in each prosciutto slice. Line each spear on the baking sheet and sprinkle with sea salt, black pepper and olive oil. Cook for 7-10 minutes or until the Prosciutto begins to crisp.
How easy is that??
TIP: You can also put the asparagus spears on the grill. I’m using the oven because our grill is going to be full, but either way is crowd-pleasing!
