I hope everyone had a great Fourth of July! Despite the heat wave here in D.C., we had a fabulous time hosting friends and family and seeing the Capitol Fourth Concert and fireworks. Our cookout was touch and go there for a while as my grilling skills are in their infancy and we had a lighter fluid leakage crisis. BUT, fortunately, everything turned out well and the meal was a success. Now, after a weekend away in the Chesapeake Bay with my girlfriends, I’m ready to share the recipes!
First up, the American Flag Appetizer. Last week, everywhere I looked on the internet, bloggers and Pinterest lovers alike were posting pictures of red, white, and blue foods arranged into patriotic American flags. I’m not usually one to jump right on the bandwagon, but it was such a cute idea and a great way to make healthy foods fun, I couldn’t resist my own interpretation of the holiday party treat.
My red, white and blue foods of choice were:
Watermelon
Goat Cheese
Blueberries
All you have to do is cut the watermelon into one inch squares and cut the goat cheese log into strips then arrange like above.
As you can see, the flag is a little jagged and uneven due to my hasty watermelon cutting skills and the super crumbly goat cheese, but its festive and gets the point across! Serve it up with a side of crackers for the goat cheese or you can swap the goat cheese for feta and your guests can mix it with the watermelon to make a watermelon-feta salad.
With a recipe as easy as this, you can be patriotic all summer long!
