So, I recently joined a food blogger community on Google+. I should add that I also recently learned how to use Google+. Slow as always on the uptake. 🙂 But, back to the community. It has changed my blogging life. I kid you not.
It’s got over 2,500 members, and it’s purpose is to provide a sounding board and a networking space for food bloggers. All those questions, comments and concerns I’ve had over the past few years? Now, I just blast them out to my 2,500+ new friends. I’ve met a lot of great people so far and it’s gone a long way towards helping me grow my social media relationships and presence.
One of those great people I’ve met is Matt Kearns. Matt is probably one of those most active members in the community, always asking the questions that are right on the tip of my tongue. He has an insatiable thirst for food blogging knowledge and it’s contagious.
When he asked if anyone in the community wanted to do a feature/recipe exchange, I jumped at the chance to partner with him. Fortunately, I live behind a computer and he didn’t see me raising my hand and shouting, “pick me, pick me” like a 5-year-old.
I had looked over his blog and some of his recipes before, but I immediately started scrolling through his site in more depth.
Ummm, he’s been a chef for 13 years! He’s one of the owners of The Main Dish, a concept in Calgary, Alberta that offers gourmet, healthy takeaway! He’s cooked for athletes! Wowza! He’s pretty impressive. But what really got me is that he shares the same food mantra that I try to espouse – balance and moderation. Like me, he tries to eat healthy 75 percent of the time while still leaving some room for indulgences. Twinsies! (Sorry, couldn’t help it).
Matt created the Fresh Menu Planner website to share his 13 years of cooking knowledge and his delicious, healthy recipes.
Recipes like Kale Avocado Basted Eggs.
I think I’ve made my love for kale, avocado and eggs clear in the past so obviously this recipe makes me swoon. The best part is it can be ready in under 10 minutes. P.S. Basted eggs are genius! Kind of like fried eggs but healthier.
If you’re looking for a healthy dinner, check out Matt’s Sesame Thai Chicken Lettuce Wraps. Mmm….those look good.
I could absolutely get the hubby on board with these lettuce wraps because he loves Thai flavors, especially lemongrass and sesame oil. Did you know that sesame oil can help reduce blood pressure and boost bone health? I had no idea! Thanks Matt. 🙂
Both of these recipes are gluten-free and the lettuce wraps are also dairy-free. But the only label these dishes need is delicious. (I know, I get corny when I’m excited. Don’t judge).
In all seriousness, if you haven’t checked out Matt’s site, get on it! He’s got loads more amazing healthy recipes. You’ll thank me. Promise. 🙂
